Be clear-eyed going in: these are sourdough bagels, not the boiled-and-baked New York variety. A handful of reviewers have called that out directly, and they're not wrong — the crust has real chew, the salt presence is assertive, and if your bagel reference point is a sesame from a Midtown cart, the comparison will trip you up. But if you come at this as its own thing — which it is — the quality is hard to argue with. The sourdough is alive in a way that pre-packaged product simply isn't, and the Apollo and the bacon and egg bialy have both drawn legitimate praise from people who showed up skeptical.
